
Fresh Home Made Buttermilk Biscuits are a staple for breakfast in the Ozarks. These tasty biscuits are my husbands favorite served with sausage gravy. I like them with butter and homemade jelly. Egg and cheese sandwich is amazing made with these biscuits.
As a youngster I did not know there was anything other than homemade biscuits. When I heard someone refer to “womp” biscuits I was very confused. It was explained that you “womp” the can of premade, canned biscuits on the counter to break the seal before placing them on the cookie sheet to bake. After tasting said product, I was sure that Homemade Buttermilk Biscuits are much more to my liking.
I encourage you to try baking biscuits from scratch if you have never made them before. This recipe is pretty simple and I will include some tips that I have learned during my years of baking.
How to make Buttermilk Biscuits
First of all mix the dry ingredients together. Then measure and mix in the shortening. I prefer to use butter flavor Crisco, but regular shortening, butter or lard will work. Low fat shortening or butter product is does not work well because the fat makes the biscuits flakier. I measure the shortening by water displacement. Put the amount of cold water in the measuring cup equal to the shortening called for in the recipe. Then add amount of shortening to measure double. So if you want 1/2 cup of shortening, put 1/2 Cup of water in the measuring cup add shortening until the water comes up to the 1 Cup mark and you have the correct amount of shortening.

When making biscuits the less you handle the dough the better the biscuits will be. After you mix the buttermilk into the flour and shortening mixture, stir just until combined. Turn the soft dough out onto a floured surface and fold the dough onto itself about 6-9 times. Just enough to incorporate enough flour to make it not sticky. Too much kneading or folding will make the biscuits tough.
I like to bake my Buttermilk Biscuits on a baking stone. They bake evenly and brown nicely on the bottom as well as the top. If you use a thin cookie sheet be sure to bake on the top shelf so the bottom of the biscuits do not get too brown and crisp.
The Recipe for Buttermilk Biscuits
Buttermilk Biscuits
Ingredients
- 2 C All-purpose flour
- 3 tsp. Baking Powder
- ¼ tsp. Baking Soda
- ½ tsp. Salt
- ½ C Butter Flavor Crisco
- ¾ C Buttermilk
Instructions
- Preheat Oven to 450°
- In large bowl mix flour, baking powder, soda and salt.
- Using pastry blender or fork, cut in shortening until mixture resembles course crumbs.
- Stir in buttermilk until mixture forms a soft moist dough.
- Knead dough lightly on a floured surface until no longer sticky.
- Press dough out to about ½ inch thickness.
- Cut with floured 2 in. round cutter.
- Place Biscuits on ungreased cookie sheet or baking stone.
- Bake 450° for 8-12 minutes until light golden brown on top.
Cheesy Buttermilk Biscuits
This recipe can easily be turned into cheese biscuits. Just add 1/2 to 3/4 cup of shredded sharp cheddar cheese with the dry ingredients. If you like garlic add a half tsp. of garlic powder. You can brush the tops of the Buttermilk Biscuits with melted garlic butter before baking for a brown buttery top.
